Default Gmail help - folders and archives

I'm probably having a thick moment, but...
    1) How do I access emails in Gmail that I've archived?
    2) Is it possible to create new folders or sub-folders?

    Thanks.

    1) Click on "All Mail".

    2) Can't see anything but you can label your messages which "does all the work of folders" according to Gmail here.

Theres nothing Stupid about it. Lables work just like folders but in some ways even better.

Simply create several lables and "pretend" that they are folders.
