Yes, I'd forgotten about it too. It has been out for a couple of days.

Its downloading / Installing in a VM at the moment. But reading the Blog, This is a good idea.
We’ve heard from many of you that you’d like to customize your pins in Start by organizing them into folders, so we’re introducing the first version of folders in this build. Simply drag an app on top of another to create a folder. You can add more apps to a folder, rearrange apps within a folder, and remove apps from a folder. Keep an eye out for further improvements like the ability to name and rename folders in one of our upcoming builds.
The above, they do it already for the Microsoft Office range of products so shouldn't be to difficult to allow you to make your own.

I don't have a touch screen so that's all theoretical for me.

I see on YouTube video this morning that you're going to have to have a MS account to install Win 11 pro soon, no local accounts same as Win home. That will piss off a few people.

Not me, I'll never be using it anyway!

Its only going to P8ss off IT support & IT departments . The very people you want to not start looking for other alternative (Macs , Linux)

You install it with a junk live a/c
then add the user local a/c you really wanted
then delete that live a/c .

There is a better workaround that Ive used for 11 Home installs/setups , but Im sure MS will plug any holes to bypass this in the future .

Chipping away at the things people actually wanted in Windows .

The longer they exist the more arrogant engineering departments become, from top level management down to minions in engineering all become convinced that no one knows more about what is best for the product than them, and worst of all they stop listening to suggestions from outside including what customers may want, look at the start menu debacle as a good example of this thinking.
It's not the least charm of a theory that it is refutable. The hundred-times-refuted theory of "free will" owes its persistence to this charm alone; some one is always appearing who feels himself strong enough to refute it - Friedrich Nietzsche
