As far as I can see, Open Office only has an American spellcheck, although I have specified English NZ or UK in the Options. Is there a secret way of introducing this new language?!!

You may need to download the NZ dictionary.
Extra dictionaries can be downloaded from their website. On the main download page IIRC.
The latest version, 1.1.1 can now automagically download & install additional dictionaries.
