You could use something like handy Backup (http://www.handybackup.com/) - its not free, but there is a 30 day trial to see if its what you want.
It lets you back up to where ever you want at what ever time you want and you can select individual files or folders. They can be replaced, or keep so many versions etc.

I use it for doing daily backups to a server on my LAN of certain files and folders, as well as windows home server for full system backups.

Another free program you may want to look at is Synctoy (http://www.microsoft.com/downloads/details.aspx?FamilyId=E0FC1154-C975-4814-9649-CCE41AF06EB7&displaylang=en) By Microsoft, it does transfers over a LAN as well.

Another fine piece of free software that will do that job for you is Allway (http://allwaysync.com/)
