How do I setup my fstab so I can write to my windows fat32 partitions even when I am not the root user?

Could someone please post an example of theirs if you do the same thing?

You should have made a mount point in /mnt first for the partitions, and then edit your fstab like this:
/dev/hdb2 /mnt/shared/data vfat auto,umask=000,user 0 0
Where hdb2 is your parition, and /mnt/shared/data is your mount directory in /mnt for example.
