Does anyone know much about rebuilding laptops?
Are processors, motherboards and memory readily available? If so - where?
Overall, is it worth buying an older laptop and rebuilding it, or is it cheaper to buy a completely new one?

Dont believe it possible. Economically anyway. Laptops are such custom built items, motherboards are unlikely to fit between models even if they were available.

Ram is not a problem.

Processors are probably BIOS dependant, and BIOS is hard soldered to Motherboard. Therefore Processor upgrades not possible.

If a display is dud, you likely will find it cheaper to replace the laptop. I know of units that were uneconomic to even replace a failed LCD display.

Its the price you pay for miniaturisation
